I am a huge fan. If you’ve never heard of orzo and you don’t recognize it from the above picture, it’s tiny little amazing pasta. I have made orzo twice now. Once it was in a Greek recipe and tonight the one I made had an Italian flair. I very highly recommend it. Here’s the recipe I used tonight:
1. In a medium skillet, saute about a cup of uncooked orzo in some olive oil until golden brown
2. Add one can of chicken broth, bring to a boil
3. Reduce heat, cover, and simmer for about 15 minutes, or until all liquid is soaked up
4. Remove from heat and mix in as much salt, pepper, basil (recipe said fresh, but I used dried), and parmesan cheese as you desire.
5. Serves four (as a side)
Yummy!!!!!! And very, very easy to make. It’s nice for a change from rice or regular pasta. I’m trying to be better in the kitchen. (Have I told you I made apple pie FROM SCRATCH??? Even the crust! The edges look a bit rough, but it tastes pretty good. I am so proud of my first pie!)
Anyway, I’m just trying to be a better wife all around. What has most recently inspired me is Farmer Wants a Wife. They had this pie baking contest and it made me realize that I am a southern woman married to a southern man and I had never made a pie from scratch. So, I set about doing it. And I set about making more real meals. You know, following recipes involving flour and oil and the occasional vegetable instead of just following the directions on the side of a box. But, the little girls on the country bachelor show aren’t really all that inspiring because I can whip their tails in the kitchen (and probably all over the farm). So, I have a real, live mentor. She’s more of a southern belle than a country wife, even though she’s not from the south.
You see, I have this friend back in Miami who is the perfect wife (I can’t imagine the crust edges on her pies being burnt). Her home, even with an infant and a husband, is spotless. Her decorating prowess is without match. Her cooking puts Paula Deen and Rachael Ray to shame. It doesn’t seem to ever bother her to cook or clean. She’s just always happy and to top it off, she always looks stinking BEAUTIFUL (again, even with an infant). I have NEVER seen her with a bad hair day. And do you have any idea how humid Miami is? It’s really ridiculous. My husband got the raw end of the deal on this one… maybe he should have met her first! (Phew… I got lucky on this one.) I have realized this and I have re-evaluated my performance. So, she’s my model now. She’s what I aspire to be in a wife. Throughout the day, I try to think to myself, WWTD? It’s helping. But I’ll never be as amazing as her. She’s practically perfect in every way.
